    These were good, but just ok. The corn tortillas were difficult to work with and kept splitting. They held very little filling as I would've liked as a result. I also found that they did not need to be in the oven as long as listed. My test batch was over-browned and too crispy/crunchy. The remainder I baked for only 8 minutes or so and they were golden brown and crispy = much better. However, they seemed a bit "one note" to me. I'm trying to figure out what I could do to jazz them up for next time. They most definitely need salsa, sour cream or guacamole. If I make them again, I will use flour tortillas. Flour tortillas are slightly bigger and I feel more filling needed to be inside of these. Plus flour tortillas will be easier to roll.

    These are great! I doubled the recipe and also had little tortillas so rolling them up was a little tricky, but otherwise delicious! I’d give yourself a lot of time to make them. I think I could be faster with practice but all the prep and cooking took about an hour to an hour and a half (estimation, I didn’t time myself.)
