- 2 tsp. Dijon mustard
- 2 Tbsp. everything bagel seasoning (see notes)
- 1/2 tsp. sea salt
- 1/4 tsp. black pepper
- 1 clove garlic (minced)
- 1/2 cup olive oil
- 4 cups mixed greens (arugula, or baby spinach, 3-4 ounces)
- 1/4 cup sliced green onions (thinly)
- 1/4 cup herbs (freshly chopped, I’ve been using basil)
- 20 cherry tomatoes (Sungold, halved, 1 cup)
- 1/2 avocado (ripe, thinly sliced, see notes)
- 6 breakfast sausages (small, cooked, see notes)
- 4 eggs (cooked over easy)
- everything bagel seasoning (Extra, to sprinkle over the top of each salad.)
