What an unexpected and delicious way to use winter squash! I doubled the cumin and paprika in the spice blend, and it turned out great. I also added chorizo to the bowls and served this for dinner. Nobody needs to know it's a breakfast recipe ;)

This was delicious! Such a delicious savory dish I couldn’t imagine all these ingredients go so well together! One time we had left over park carnitas from another one of skinnytaste’s recipes and we threw it in and it was amazing!
