  • 2 pounds ground pork (best to get boneless pork shoulder ground for you by a butcher)

  • 2 teaspoons fennel seeds (crushed)
  • 1/2 teaspoon black pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon SYD Hot Rub
  • 2 tablespoons apple juice
  • 2 tablespoons dry red wine
  • 1/2 teaspoon grated nutmeg (freshly, if you have it)
  • 1 teaspoon cayenne pepper (more if you like more spicy)
