- 1 sweet onion (large, thinly sliced)
- 1/4 cup kosher salt (Diamond, [Updated: Why Diamond? Read this first.])
- 3/4 cup sugar (see note above)
- 1/2 cup distilled white vinegar
- 1/4 tsp. ground turmeric
- 1 Tbsp. mustard seeds
- 1 Tbsp. coriander seeds (if ground, use 1 teaspoon)
- 1/4 tsp. celery seed

DO NOT USE 1/4 CUP SALT!!!!!!! Wayyyyyyy to salty. I like the rest of the recipe but unfortunately you can't eat to many. Next time I won't use that much salt.

These are the real thing! These are the bread and butter pickles I remember from my Grandmother's table: sweet, tangy, crisp and delicious. Eat them on the side with BBQ, put them on a pulled pork sandwich, chop them up into tuna salad or potato salad. YUM!! I have made them twice from the cucumbers in our garden and will never lose this recipe. A real blast from the past and so easy!!!
