- 1 1/2 lb. potatoes (yellow or red)
- 8 slices sandwich bread (I used whole wheat white bread, but regular white bread would be fine and is what is traditionally used)
- 3/4 cup chickpea flour (besan)
- 1/4 tsp. turmeric
- 1/2 tsp. cayenne
- 1 tsp. chaat masala
- salt (to taste)
- 1/2 cup vegetable oil (for frying)
- 15 dates (make sure they're pitted)
- 1 Tbsp. tamarind pulp (this is the thick concentrate you get in a jar, and not the pulp extracted from tamarind pods. If you do use tamarind pods because they're all you have, make sure you don't make the pulp too watery)
- 1/4 tsp. cayenne
- 1 tsp. cumin (lightly toasted)
- salt (to taste)
- 1/2 cup water
- 1/4 cup cilantro
- 1/4 cup mint leaves
- 1/2 jalapeno pepper (small, deseeded)
- 2 cloves garlic
- 3 Tbsp. water
- 2 Tbsp. lemon juice
- salt (to taste)
