- 1 clove garlic (medium, 1/4 oz/6 g, peeled and charred)
- 1 3/4 cups chicken stock (437.5 ml)
- 3/4 cup lard (168 g, enriched with bacon fat if possible)
- 1 Tbsp. baking powder (12 g)
- 3 cups masa harina (400 g)
- 1 tsp. sea salt (6g)
- 1 cup pumpkin seeds (hulled, 125 g)
- 8 oz. leaves (250 g, fresh chaya, substitute: chard or kale, tough stems removed and discarded)
- 4 pieces banana leaves (cut to measure 10x30 inches, plus extra, for ties)
- 6 eggs (boiled, peeled, and sliced in half lengthwise)
- chile sauce (your choice)
- 1 cup green cabbage (85 grams, finely shredded)
- 1/2 cup radishes (60 g, diced or cut into julienne strips)
- 1/2 cup tomatoes (80 g, about 1 medium Roma, seeded and cut into medium dice)
- 1/2 cup red onion (85 g, cut into medium dice)
- 1/4 cup chives (20 g, chopped)
- 2 habaneros (medium chiles, 1/2 oz/14 g total, or to taste, stems removed, seeds intact, finely chopped)
- 1/2 cup Seville orange juice (125 ml, or substitute, see above)
- 1/4 cup cilantro (15 g, finely chopped)
- 1 tsp. sea salt (6g, or to taste)
