- 1 lb. ground sirloin
- 1 1/2 lb. beef chuck (trimmed of fat & cut into cubes, about ½ to 1 inch in size)
- 14.5 oz. diced tomatoes with juice (peeled and)
- 12 floz stout beer (or bottle dark)
- 1 cup brewed espresso (strong, or coffee)
- 12 oz. tomato paste
- 14 oz. beef broth
- 1/2 cup dark brown sugar (packed)
- 3 1/2 Tbsp. chili powder
- 1 Tbsp. cumin powder
- 1 Tbsp. unsweetened cocoa powder
- 1 tsp. dried oregano
- 1 tsp. ground cayenne pepper
- 1 tsp. ground coriander
- 1 tsp. salt
- 1/2 tsp. black pepper
- 60 oz. kidney beans (drained)
- 4 peppers (fresh jalapeños, seeded and chopped, we put in ½ the seeds for spice)
- 1 Tbsp. bourbon (optional)
