- 1 brown onion (large, finely chopped)
- 5 cloves garlic (finely chopped)
- 1 knob ginger (finely grated)
- 1 tsp. sea salt
- 1 cup fresh shiitake mushrooms (stems removed, cut into 1cm-thick pieces)
- 1 kg oyster (wagyu, blade, cut into 2cm pieces)
- 1/3 cup plain flour (seasoned with salt and freshly cracked black pepper)
- 4 Tbsp. Shaoxing wine
- 2 cups fresh chicken stock
- 2 Tbsp. mushroom soy sauce (Chinese dark)
- 2 Tbsp. light soy sauce (Chinese)
- 2 tsp. rock sugar
- 1 whole star anise
- 1 whole cinnamon stick
- freshly ground black pepper
- 1 Tbsp. dried shrimp (soaked in hot water for 2 hours)
- 750 grams red chillies (long, seeded and roughly chopped)
- 1 knob fresh ginger (chopped)
- 7 cloves garlic (fresh, chopped)
- 1 1/2 tsp. sea salt
- 3 tsp. caster sugar
- 3/4 cup vegetable oil
- 2 shallots (long green, chopped)
