Description
Give juicy, thick-cut, bone-in pork chops the German sweet-and-sour treatment with apple cider, brown sugar, and cider vinegar. After the chops cook with the cabbage, apples, and seasonings, you can serve them straight from the skillet. For a beer pairing, consider an IPA or bock beer. The recipe is a Yummly original created by Ashley Strickland Freeman.

- 1 Tbsp. extra-virgin olive oil
- 4 bone-in pork chops (1 to 1 ½ inches thick, 1 ½ to 2 ½ pounds total)
- 1 tsp. salt (divided)
- 1 tsp. black pepper (divided)
- 2 Tbsp. salted butter
- 1 sweet onion (such as Vidalia, or a regular yellow onion, sliced)
- 6 cups red cabbage (half of a 2 ½-pound cabbage, sliced about ¼ inch thick)
- 2 Honeycrisp apples (or Gala, cored and sliced about ⅓ inch thick)
- 1 tsp. fresh thyme leaves (or 4 large sprigs fresh thyme, plus thyme sprigs for serving))
- 1/2 cup apple cider
- 3 Tbsp. packed brown sugar
- 3 Tbsp. apple cider vinegar

Directions
- Heat oil in a 12-inch cast-iron skillet or other heavy frying pan over medium-high heat. Sprinkle pork chops with 1/2 teaspoon each salt and pepper. Cook pork chops until browned, turning once, 2-3 minutes per side. Transfer pork chops to a plate and set aside.
- Add butter to the skillet along with onion, cabbage, and remaining 1/2 teaspoon each salt and pepper. Cook, stirring occasionally, until the cabbage wilts, about 5 minutes. Stir in apples and thyme leaves.
- Stir together apple cider, brown sugar, and vinegar in a small bowl. Add to the skillet. Nestle pork chops into the cabbage mixture. Cover, bring to simmering, then reduce heat to low and cook until pork reaches 145° to 160°F in the thickest part when tested with an instant-read thermometer, 5-10 minutes. Scatter a few thyme sprigs on top.

It was yummy a lotta work/chopping, etc for it tho Might make it again when I’ve got old apples to use up
