- 4 lb. chicken thighs (both bone-in and skin-on, and drumsticks)
- kosher salt
- freshly ground black pepper
- 1 Tbsp. poultry seasoning (my recipe comes from my cookbook!)
- 4 strips bacon (thick cup Applewood)
- 1 onion (medium, chopped)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 3 Tbsp. all purpose flour
- 14 oz. fire-roasted diced tomatoes (pureed in food processor)
- 1 cremini mushrooms (ounce container, white button would work too)
- 16 potatoes (baby redskin, halved, or quartered if large)
- 1 qt. low sodium chicken broth
- fresh parsley (minced)
- sourdough bread (Serve with torn)
