- 6 Tbsp. extra virgin olive oil
- 3 garlic cloves (peeled and finely minced)
- 3 inches ginger (peeled and thinly sliced into thin matchsticks, julienned)
- 1.2 kilograms beef rump steak (2.6Ib/42oz, preferably grass fed, trimmed and sliced into 1cm thick strips)
- 50 grams black fungus (dried natural, soak in hot water until soften)
- 22 shiitake mushrooms (soak in hot water for 30 minutes until soften. Stems removed and cut into quarters)
- 1 star anise (large)
- 5 cloves
- 1/2 Tbsp. gluten (free corn, maize starch mix with ½ cup water)
- 2 tsp. salt (or to taste)
- steamed rice (to serve)
- 3 Tbsp. blackstrap molasses
- 2 Tbsp. sesame oil (pure)
- 1/4 tsp. ground white pepper
- 1/2 cup medium dry sherry
- 3 sprigs coriander (including stems, roughly cut into 1 to 2 cm lengthwise)
- 2 fresh red chilli (long, deseeded and finely sliced)
