- 6 plum tomatoes (ripe medium, skinned and roughly chopped)

- 240 grams chickpeas (drained and rinsed)
- 110 mL olive oil
- 8 sprigs fresh rosemary
- 2 large garlic cloves (peeled and crushed)
- 3 anchovies (finely chopped)
- 1 tsp. ground cumin

- 200 grams broccolini (quartered lengthways, or turnip tops)
- 250 grams orecchiette
- 30 grams finely grated Parmesan
- 2 aubergines (large, cut into 2cm dice)
- 350 mL olive oil

- 100 grams breadcrumbs (fresh white)
- 50 grams basil leaves (chopped)
- 1 lemon (cut into four wedges)
