- 1 cup quinoa (uncooked)
- 2 chicken sausages (Gilbert's Craft Sausages Bourbon Apple, sliced on bias into 1 inch pieces)
- 2 cups spinach (or arugula)
- cranberries (handful)
- walnuts (handful)
- 3 Tbsp. low fat greek yogurt
- cilantro (garnish, optional)

Directions
- Cook quinoa – 1 cup quinoa per 2 cups water. Pre-toast your quinoa in a skillet or wok for a nutty, toasted accent. Bring 2 cups water to a boil. Add quinoa. Reduce heat to medium, boil covered for ~15 minutes until water is absorbed and quinoa is transparent and fluffy.
- Heat your sausage on a grill or saucepan and slice on the bias.
- Add quinoa and greens to bowl.
- Add your sausages, top with walnuts, cranberries, cilantro to garnish, and a dollop of yogurt.
