- 1 onion (Large, I prefer red onion diced)
- 2 stalks celery (thinly sliced)
- 1 large carrot (sliced)
- 1 green bell pepper
- 1 cup brown mushrooms (Diced)
- 398 mL fire-roasted diced tomatoes (1 can, my favourite brand is Scarpone’s)
- 1/2 cup water (or Broth)
- 540 mL red kidney beans (1 can, rinsed)
- 540 mL black beans (2 cans, rinsed)
- 540 mL pinto beans (1 can, rinsed)
- 3 cloves garlic (Crushed)
- 1/4 tsp. ginger (Grated)
- 1/2 tsp. cayenne pepper
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. cardamom
- salt (to taste)
- pepper (to taste)
- 1/2 tsp. dried oregano
- 1/2 tsp. dried thyme
- 1/2 tsp. dried sage
- olive oil
- 1 cup corn (canned or frozen, or fresh if you’re lucky!, optional)
- jalapeno pepper (Optional –)
