  • 2 1/4 pounds potatoes (peeled and very thinly sliced)
  • 2 onions (medium, thinly sliced)
  • 2 cups vegetable stock
  • 2 tablespoons thyme leaves
  • 1 tablespoon olive oil

    Directions

    1. Preheat the oven to 350°F. Lightly spray an 11 x 8-inch baking dish with no stick cooking spray.
    2. Place a layer of potato in the bottom of the prepared pan. Top with a little onion. Pour a little stock over the top. Sprinkle with a little thyme or rosemary. Season to taste.
    3. Repeat layers until all the ingredients are used. Drizzle with olive oil and cover with foil.
    4. Bake for 1 1/2 hours, until the potatoes are very tender. Increase the oven temperature to 450°F.
    5. Remove the foil. Bake for 20-30 mins, until golden. Serve with roast lamb or chicken, or grilled meats.
