- 2/3 cup sugar
- 4 1/2 tsp. instant yeast
- 2 large eggs (beaten, at room temperature)
- 12 unsalted butter (tablespons, melted and cooled)
- 1 Tbsp. vanilla extract
- 3 cups bread flour
- 1 cup all purpose flour
- 1 tsp. salt
- 2 qt. frying fat (lard, crisco, or neutral oil)
- 4 cups vanilla pastry cream (I used this recipe)
- 8 Tbsp. unsalted butter
- 1/4 cup whole milk
- 1 Tbsp. light corn syrup
- bittersweet chocolate (5 ounces high quality, 70% cacao, finely chopped)
- 1 tsp. vanilla extract
- 1 3/4 cups confectioners sugar
