- 2 Tbsp. avocado oil (or light olive oil)
- 1 lb. beef stew meat
- 1 bay leaf
- 8 cups beef broth (divided)
- 1 3/4 lb. beets (roots only; use the greens for something else, scrubbed and trimmed)
- 4 medium carrots (finely chopped)
- 3 stalks celery (diced)
- 1 onion (large, chopped)
- 1 starchy potato (large, such as Russet, scrubbed and chopped)
- 1/2 lb. savoy cabbage (thinly sliced into shreds, about 5 cups shredded)
- 4 cloves garlic (minced)
- 1/2 tsp. coarse kosher salt (use a bit less if using fine salt)
- 1/4 tsp. black pepper
- 1/4 tsp. allspice
- 3 Tbsp. tomato paste
- 6 Tbsp. red wine vinegar (or apple cider vinegar; more or less to taste)
- 1/4 cup fresh dill (chopped, plus more for garnish if desired)

I would make again. Used garden beets and Napa cabbage. I did sauté my onion for a few minutes then added carrots and sauté the carrots for a few minutes before adding all other ingredients. Thank you for sharing your recipe.

This recipe was absolutely delicious and hardy enough for dinner by itself or with some crackers & cheese. I’d suggest serving it with a glass of red wine (a red blend was great). The only thing I did differently was to roast the beets for 1+ hour @ 400 degrees wrapped in parchment & foil before shredding and dicing them. While it took a while to cut up all those vegetables, it was worth the effort.

First time making this classic . Very hearty on this cold winter day. Took a lot of time chopping. Good hacks would be to purchase shredded cabbage , carrots . Diluted bullion powder to make less salty to satisfy low sodium recipe. Made with stuffed cabbage. Russia , Russia , Russia !

I had no idea what to do with my beets before they went bad. I thought of freezing them and using them for smoothing later... thank God for Yummly and Faith for this recipe!!! I did not use meat and used vegetable broth instead. Tasty and comforting! Really really liked it, I did not know the dish or have ever heard of it so I am super happy with the result.

Really good. Served with fresh crusty bread and corn on the cob. 3 yr old was not a fan but still ate some.

absolutely wonderful! With that dolop of sour cream, heavenly. I use Beef stock, and a touch of butter...
