- 3 lb. soup bones (knuckle bones, neck bones, or breast bones)
- 3 lb. shoulder roast (meat, etc, of substitute both bones and meat with a whole duck, chicken or goose, cut into manageable chunks. Skin and bones are a must on the poultry.)
- 1 onion (large, with skin or 5-6 dark green portions of leeks, fresh or frozen)
- 1 garlic (small, head, with skin)
- 2 carrots (cleaned, broken in half)
- 3 stalks celery (cleaned, broken in half)
- 15 peppercorns (crushed)
- salt (to taste)
- 4 sprigs fresh thyme (optional)
- 2 Tbsp. olive oil (lard or tallow for sweating vegetables)
- 2 roots (large, leaves and stems removed, thoroughly cleaned)
- 2 carrots (thoroughly cleaned)
- root vegetable (your, here, if desire, see suggestions above, thoroughly cleaned)
- 3 stalks celery (Chinese celery, or 1/2 celeriac root, cleaned)
- 1 onion (large, peeled)
- 1 bell pepper (large, cored and seeded)
- 1 green pepper (large, cored and seeded)
- 3 large potatoes (peeled)
- 1 cabbage head (small to medium, cored)
- 14 oz. diced tomatoes with juice
- 1 can tomato paste (or 1 14 oz can of diced tomatoes with juice, or 3-4 large Roma tomatoes, diced)
- 5 cloves garlic (minced)
- salt (fresh ground pepper to taste, a dash of Paprika or cayenne pepper, up to you)
- 1 lemon (juice of)
- 2 handfuls herbs (fresh chopped, or your choosing.)

Amazing recipe made it as written fabulous
Tasted a little too lemony immediately after it was made but the next day and the day after - the flavours blended - it was outstanding
