- 1 onion (large, diced)
- 3 carrots (diced)
- 3 celery (ribs, diced)

- 12 oz. crimini (or other mushrooms, quartered or sliced)
- 3 Tbsp. tomato paste
- 1 glass wine (either white or red, about 1 c.)
- 28 oz. plum tomatoes (and their juice, I prefer Bionaturae organic from Italy or Muir Glen organic)

- pepper
- 2 cups chicken stock (homemade or Swanson’s organic)
- 1/2 cup polenta (quick cooking)
- 1 knob butter (about 3 T.)
- Parmigiano Reggiano (a good amount of, finely grated, about 1 c.)

Pretty tasty! Needed a bit of umph so added rosemary which went well. Only thing is that you have to cook it a lot longer than what is written here. I cooked it for three hours and some of the meat was still tough and I had turned it up to 325 about an hour into it.
