Used ground veal in place of the pork and added about 1/2 cup coarsly chopped green olives stuffed w/pimento. Some Parmesan cheese (1 or 2 Tbsp ) is a nice addition too but be sure to use freshly ground real cheese not the stuff in the shaker container.
