I enjoyed this more than I expected lol. I cut out the rice suggestion at the end of the directions (keeping it Keto) and it was a nice change for breakfast :) I found that one bunch wasn’t enough to make a meal, so I chopped up two baby bok choy bunches and used 2 eggs instead and it was perfect

I ditched the egg and just cooked the Bok Choy a few minutes longer. I love it.
