- 3/4 cup gluten (all-purpose, free flour mix, I used King Arthur Flour)
- 4 Tbsp. chia seeds
- 2 tsp. baking powder (sifted)
- 1 1/2 tsp. ground cinnamon
- 1 tsp. baking soda
- 3/4 tsp. fine salt
- 2 large eggs
- 1 cup coconut palm sugar
- 1 cup buttermilk (low-fat, or kefir, or 1 cup low-fat milk with 1 tablespoon lemon juice sprinkled on top, left to curdle for 3 minutes without stirring)
- 1/3 cup canola oil
- 2 tsp. pure vanilla extract
- 1 cup frozen blueberries (not thawed)
