Amazing!! The best vegan waffles recipe I've ever tried. I've done it a couple times now and works every time, the mix is soft and delicious.

It was really good, fluffy for sure but I made some substitutions- blended the dry ingredients, used rolled oats, blended bananas and cinnamon/nutmeg instead of allspice.
I will also use less batter on the griddle next time- it was really thick and I prefer airy waffles.

Came out really well! Notes to self: Substituted applesauce with mashed banana (almost 1 full banana); 1 cup of flour with 3/4 cup of Spelt and 1/4 cup of All Purpose flower; and allspice with cinnamon.

This tastes good! I sub canned pineapple ( mashed ) for applesauce and fresh blueberries for frozen ones, and it turned out really good! Only that I use a waffle machine and it kept hissing during and even after making the waffle. Maybe fresh berry juice was leaking??? I probably will try this recipe again!
