Description
Here's a delightful summer refresher that makes excellent use of fresh blueberries when they are at their juicy and flavorful best. Cooking them down to a syrup with sugar means they infuse the drink with their wonderful taste while also deepening their color. Then the syrup is combined with lemon juice, cinnamon sticks, fresh mint, and sparkling water just before serving, with or without ice.
Ingredients

4 SERVINGS
- 150 grams blueberries
- 50 grams sugar
- 1/2 lemon
- 2 cinnamon sticks
- 6 mint leaves
- 750 mL sparkling water (cool, or soda)
- ice (to taste)

Directions
- Place the blueberries and sugar in a small pan and bring to a boil until blueberries release juices and and syrup starts to thicken (about 5 minutes). Let cool.
- In a pitcher, mix the syrup, lemon juice, cinnamon sticks, mint leaves and sparkling water. Stir well, add ice cubes and serve well chilled.
- Note: For a sweeter flavor, replace sparkling water with soda.
