- 1 pie shell (9 inch unbaked, I am using a gluten free)
- 3 eggs (+ 1 yolk, beaten)
- 3/4 cup white sugar
- 1/4 tsp. salt
- 1 tsp. vanilla extract
- 1/4 tsp. ground nutmeg
- 1 egg white
- 2 1/2 cups half and half (scalded)
- 2 cups blueberries (I used frozen and did not thaw them.)
- 2 Tbsp. tapioca starch
- 1/4 cup raspberry jam (or sliced strawberries)
- 1/4 cup whipped cream
