Blueberry Cookies

Description

I came up with this basic little recipe several months ago and loved them. So, when I picked up a basket of blueberries the other day at the grocery store, I knew I wanted to make these cookies again. It's such a basic recipe, but the simple addition of lemon extract gives it just the perfect flavor boost and pairs well with fresh, plump blueberries. Rolling each dough ball in a coating of raw sugar gives this cookie great texture but also looks pretty - a perfect treat to have with a cup of tea :)

Ingredients

  • 1 stick butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 eggs (slightly beaten)
  • 1 teaspoon lemon extract
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup fresh blueberries (rinsed and drained)

    Directions

    1. Preheat oven to 350 degrees.
    2. In bowl of a stand mixer, cream butter and sugar. Scrape down sides and add eggs and lemon extract. Mix well on medium for about a minute.
    3. In separate bowl, combine flour, salt and baking soda with a whisk. Add flour mixture slowly to creamed butter mixture. Mix until fully incorporated.
    4. Carefully fold in blueberries. Form into balls using cookie scoop. Roll each cookie dough ball in bowl of raw sugar and place on cookie sheet.
    5. Bake approximately 10-12 minutes or until golden brown on top.
