As a member of the pantheon of chia seed-based "jams" - this fruit spread is incredibly quick and easy to make. I used frozen blueberries and lemon juice from a bottle - and it still turned out great. I cheated and added a bit of Splenda to give it just a hint more sweetness without the sugar bomb. The recipe, as made, makes up just slightly more than one cup. I'll plan to double or triple this next time. I've used this on flour-less vegan chocolate "brownies" and it was foodie worthie!
