    This was such an interesting recipe! And the end product is delicious! It's much less crisp of flavor than a jelly and smoother of texture than a jam. I had 375g of blueberries that were about to spoil. I broke up and lightly (until aromatic) toasted 10-15 green cardamom pods. I used 115g of sugar. I ended up adding about 3tbsp of water because my blueberry syrup was so thick. I used a stick blender to get as much flavor out as I could before running through a sieve in batches. I ran boiling water through the sieve afterward in order to clean out the thick syrup (it was almost a candy). I used two whole eggs (for almost half a recipe), so I think I added more than the recipe called for... but how do you get half an egg?! I stick blended them as well for a smooth consistency before whisking into the hot (low heat) syrup little by little. I was scared of egg clumps, but I didn't get any. Mine took 5 mins to thicken, and the butter slightly thinned it a little. Next time, I'll let it get a bit thicker. The final product is a dream. Neither heavy nor rich. I was so surprised. I'll probably try this with other fruits as well. Instant classic!!
