- 4 honeydew melon (julienned)
- 2 Thai bird chiles (halved)
- 1/4 cup chili flakes (crushed)
- 1 cup olive oil
- 2 cloves garlic (minced)
- 2 lb. shishito peppers (fried and chopped)
- 2 lb. kale (chopped)
- 1 lb. jamon serano (julienned)
- fresh herbs (As needed, and flowers)
- 2 qt. rice (cooked)
- 2 qt. pigs blood
- 7 lb. ground pork
- 3 lb. pork fat (ground)
- 1 Tbsp. ground nutmeg
- 2 Tbsp. pimenton
- 1 pork kidney (ground)
- kosher salt (As needed)
- black pepper (As needed, freshly ground)

Directions
- Toss melon with Thai bird chilies and chili flakes.
- Let sit for one hour for flavors to combine.
- Remove Thai bird chilies before serving.
