- 1 1/2 lb. rockfish fillets (or other firm white fish such as snapper, tilapia, cod etc.)
- 4 Tbsp. canola oil (or vegetable)
- 2 Tbsp. olive oil
- 1 Tbsp. white wine vinegar
- 1 Tbsp. lime juice (or more, to taste)
- kosher salt
- pepper (to taste)
- 1 clove garlic (small, minced)
- 1 cup canned black beans (drained and rinsed)
- 1 cup corn kernels (frozen and thawed, canned, or fresh)
- 1 plum tomato (seeded and diced)
- 1/4 cup red onion (chopped)
- 1/4 cup fresh cilantro (chopped)
- 1/2 cup sour cream
- 1 tsp. lime zest
- 1 Tbsp. freshly squeezed lime juice
- 1/4 tsp. kosher salt
- 1 cup queso fresco (crumbled, or feta)

- 12 corn tortillas (lightly toasted in the cast iron pan, or briefly heated in the microwave)
- 1 lime (cut into wedges)
