  • 1 tablespoon white vinegar
  • 2 tablespoons olive oil
  • 1 yellow onion (or red, finely chopped)
  • 15 ounces black beans (can of, drained and rinsed)
  • 1 red pepper (finely chopped)
  • 1 adobo sauce (chipotle pepper in, finely chopped)
  • 2 garlic cloves (grated)
  • 2 plantains (ripe, peeled and diced)
  • 1 1/2 teaspoons cumin
  • 1/4 teaspoon coriander
  • 2 teaspoons adobo sauce
  • 1 can chipotle
  • 1 handful cilantro (finely chopped)

    this was quite good but took a long time to make as I made my own dough and don't have a press.The salsa was good but a bit bland .
