- 1 russet potato (medium Idaho)
- 6 oz. whole milk

- 6 oz. all purpose flour (I used Gold Medal)
- 1 1/4 tsp. baking powder
- 1 stick unsalted butter (at cool room temperature)
- 6 oz. granulated sugar
- 1 tsp. kosher salt
- 1 lemon
- 1/2 tsp. vanilla extract
- 1 large egg
- 3 cups sugar (confectioner's, powdered sugar, 10x)
- 2 Tbsp. light corn syrup
- 1 Tbsp. lemon juice (from the lemon you zested earlier)
- 1/4 tsp. kosher salt
- 1/4 tsp. vanilla extract (use clear vanilla for the truest color)
- 5 tsp. water (as needed)
- food color (orange)
- icing (homemade or store-bought decorator's, in white, orange, and black)
