- 4 Tbsp. olive oil (as needed)
- 1 eggplant (medium, cubed)
- 200 grams oyster mushrooms
- 6 Tbsp. soy sauce (regular, Chinese-style light soy sauce)
- 2 1/2 Tbsp. molasses
- 1/2 Tbsp. rice vinegar
- 1 1/2 Tbsp. brown sugar
- 1 Tbsp. black peppercorns (crushed)
- 1/2 Tbsp. cornstarch (mixed with ½ tablespoon cold water)
- 400 grams extra firm tofu (drained, pressed and cubed)

- 5 shallots (small, or 3 big ones, sliced thinly from top to bottom)
- 6 cloves garlic (grated or pressed)
- 1 Tbsp. ginger (freshly grated)
- 2 red chili peppers (long, sliced, get a variety that has a bit of heat but won’t burn your face off either)
- 3 green onions (sliced into strips)
- sesame seeds (for garnish, optional)
- rice (for serving)

I was so excited to make this but was really disappointed with how it turned out. Firstly the 20 mins suggestion is utterly delusional - I'm a very experienced cook and it took over 20 mins just to have cooked the veg let alone searing all the cubes of Tofu. Flavour wise it was too spicy unfortunately: I cut out the chilli's completely but even so the 1tbsp of black pepper was just waaay too much for me (esp as the tbsp of fresh ginger added it's own punch). I served with rice as suggested but that wasn't enough to cool it down so when I reheat it later in the week i'm going to try stirring some creme fraiche or yoghurt through. Adding the toasted sesame seeds was yummy though, but I also feel like a trick was missed by not marinating the tofu in the sauce first, because the tofu itself ended up being bland. Overall just quite disappointing :(

This tasted great but it did NOT take 20 mins to prepare. It was over an hour, maybe 1.5.

Was amazing! I used normal tofu pressed for about an hour, added some mangetout instead of mushrooms. So delicious
