- 1 orange bell pepper (or red, yellow, chopped)
- 1 clove garlic (or 1 tsp garlic powder)
- 1/2 chipotle pepper (canned in adobo sauce, or ½ Tbsp chili powder)
- 1 tsp. cumin
- 1 tsp. oregano
- 2 Tbsp. tomato paste (or if you don't have any, ketchup)
- 15 oz. black beans (drained and rinsed)
- 15 oz. diced tomatoes
- 10 oz. butternut squash (frozen, cubes, I used Earthbound Farm)
- 2 cups cooked chicken (diced, amount depends on preference)
- 1/2 lime (optional)
