- 1 red bell pepper (diced, about 1 cup)
- 1/2 cup chopped cilantro (loosely packed fresh, plus a bit more for garnish, if desired)
- 1 avocado
- 2 Tbsp. red wine vinegar
- 2 Tbsp. fresh lime juice (from 1-2 limes)
- 2 Tbsp. honey
- 1/4 cup vegetable oil
- 1 large garlic clove (roughly chopped)
- 1/4 tsp. dried oregano
- 3/4 tsp. cumin
- 3/4 tsp. salt
- 1/4 tsp. black pepper
- 2 chipotle peppers in adobo sauce (canned, 2 peppers, not 2 cans; use smaller peppers and if they are all large, use only 1-1/2)

Excellent! I would add more adobo pepper’s because we like it spicy and the avocado will cool it down a bit. Great for dips or as a side dish. Definitely making this again.

Absolutely delicious and super easy I did not blend the dressing, just whisked it and it was awesome will definitely make again!

Love this recipe. I didn't have Chipotle, so I added a bit of Chipotle BBQ sauce to the dressing for a subtle flavor.

Amazingly yummy the dressing just brings it all together,only thing I did different was I fire roasted the corn 🌽 and bell pepper,this chef always has really good recipes thank you so much once upon a chef you rock!

Delicious. Believe the hype. I paired it with white rice for a yummy vegan meal. I substituted chopped tomatoes for the bell pepper. This is going into the regular rotation for sure!

The best black bean and corn salad ever! Used a little less honey. As per author can substitute pinto or canellini beans for black beans.

Amazing! This bean corn salad is great and perfect for a gathering. Serve it with some tortilla chips and people will be sure to eat it all up.
