Description
A Mexican salad of black beans, corn, peppers, cilantro in a lime dressing.
Ingredients

- 30 oz. black beans (rinsed and drained)
- 3 ears corn (fresh cooked, grilled, kernels cut off the cob)
- 2 red bell peppers (diced)
- 2 cloves garlic (minced)
- 2 Tbsp. shallots (minced)
- 2 tsp. salt
- 1/4 tsp. cayenne pepper
- 9 Tbsp. extra-virgin olive oil
- 6 Tbsp. fresh lime juice
- 1/2 cup chopped fresh cilantro (plus more for garnish)

Directions
- Combine all ingredients in a large bowl and mix well.
- Cover and chill for a few hours.
- Add the cilantro right before serving and mix gently.
- Garnish with a more chopped cilantro.
- Serve at room temperature.
