- 2 beets (packs of Cooked LoveBeets or 6 small roasted, with peels removed)
- 30 cremini mushrooms
- 4 cloves garlic (minced, or garlic powder if you’re feeling lazy)
- 2 flax (“eggs” – 2 tbsp ground flax mixed with 6 tbsp water)
- 2 pasta (servings of leftover, or rice)
- 1/2 cup hummus
- 2 cups oats (divided)
- 3/4 cup pumpkin seeds (divided, you could also use sunflower seeds)
- 2 cans black beans (rinsed and drained, or you could always cook your own from dry beans)
- salt
- pepper
