- 4 oz. grated Monterey Jack cheese
- 2 oz. crumbled feta cheese
- 2 cans diced green chiles (4 ounces each)
- 1 jalapeño (medium, seeded and minced)
- 2 cloves garlic (pressed or minced)
- 2 Tbsp. lime juice
- 1/2 tsp. ground cumin
- 1/2 tsp. chili powder
- 1/4 tsp. cayenne pepper (optional)
- 1/4 tsp. salt (more to taste)
- freshly ground black pepper
- 2 cups salsa verde (mild, either homemade or store-bought)
- 10 corn tortillas
- 4 oz. grated Monterey Jack cheese
- 2 Tbsp. sour cream
- 1 Tbsp. water
- 1/4 cup red onion (chopped)

Fantastic recipe! I substituted sweet potatoes for purple "blue" potatoes, adding more nutrients. I also added more spice by throwing two serrano peppers in the homemade verde sauce. The spice and sweetness paired perfectly together.

Great recipe! I cubed and roasted the sweet potatoes and did have green chili enchiladas sauce and half ranchero Ib also used a Mexican blend instead of the Monterey Jack but otherwise followed the directions very easy and always a great hit.

I wasnt sure if this would turn out well as I love meat in my enchiladas, but it was absolutely outstanding! Definitely going into a regular rotation, seriously delicious.

Easy and delicious, I used fajiata sauce instead of salsa verde and I did use more sauce than states.
Otherwise a great recipe!

Great, made my own salsa for inside, and on outside used tomato blocks in sauce. No feta just slankie. Served with yogurt.

So good!! I also added Mexican round ground. This will become a regular for sure.
