- 1 Tbsp. olive oil
- 1 onion (chopped)
- 1 carrot (peeled and chopped)
- 1 celery stalk (chopped)
- 4 garlic cloves (chopped)
- 1/4 cup tequila
- 4 cups chicken broth
- 1 poblano pepper (roasted, seeded and chopped)
- 1 tsp. ground cumin
- 1/2 tsp. oregano
- 1 Tbsp. chopped cilantro (plus more for garnish)
- 1/2 lime (about 2 tablespoons or to taste)
