- 30 oz. black beans (rinsed and drained)
- 3 ears cooked corn (fresh, kernels cut off the cob)
- 2 red bell peppers (diced)
- 2 cloves garlic (minced)
- 2 Tbsp. shallots (minced, from one medium shallot)
- 2 tsp. salt
- 1/4 tsp. cayenne pepper
- 2 Tbsp. sugar
- 9 Tbsp. extra-virgin olive oil (best quality such as Colavita)
- 1 tsp. lime zest (be sure to zest limes before juicing them)
- 6 Tbsp. fresh lime juice
- 1/2 cup chopped fresh cilantro (plus more for garnish)
- 2 Hass avocados (chopped)

Super yummy, added a chopped jalapeño and organic green onions. The dressing is super fresh and delicious. I will make this again.

Very good, and easy to prepare. We didn’t have fresh limes, so I used Roses Lime juice, and didn’t add sugar. To get some green veggies into it, I cut about a cup or so of fresh green beans into 1 inch pieces and slightly cooked them. We didn’t have any shallots, so I used part of a red onion, slightly cooked, then chilled. Also, it definitely need more flavor, so I added ground cumin.

This tasted amazing. I substituded a few things due to being unable to go the store at the time (hurricane madness) I used 1 can black beans and 1 can of chickpeas, extra sweet corn on a cob, 1 red bell peper and 1 yellow bell pepper, and green onions in place of shallots. I let it chill for an 1 hr but it tasted good either way.

Made this tonight and it was a big hit. Halved the recipe for the two of us; used halved cherry tomatoes in place of the red pepper ( didn't have any); and used parsley in place of cilantro as we are not fans. Cut back on the oil a bit. Make sure to prepare this early in the day, it gets better with several hours of chilling. DH says we will have this again. Yum indeed!

Delicious, fresh and full of summer flavor! I would reduce the salt by half, the oil just a little bit and maybe add a diced jalapeño, but honestly the salad is delicious

Excellent Salad, This will become my go to for parties I separated all the ingredients for the salad dressing and mixed them together with a whisk. I also reduced the sugar and salt by 1/2, the fresh white corn I used was so sweet, I’m glad I made this adjustment I’m ready to make this again!

Wow what a great recipe. Like others I did change a few things, half the sugar and a little less oil along with a little Apple cider vinegar, but no cayenne or cilantro, don’t care for either. I did add tomatoes and onions and served with cornbread for some and chips for others. Will be making this quite often this summer.

This was a hit with my family! Went excellent with carnitas! To save calories, I halved the amount of olive oil and only used a tsp of sugar (I'm not a fan of sweet anyway)

It was really good. I made a couple changes. I cut back on the olive oil and added more lime juice and a little apple cider vinegar. Will definitely be making it on a regular basis

This is my favorite thing to make for a quick and easy dish! I've made it for Superbowls, parties, or just for me and my family. Super easy to make, and its delicious! (I usually substitute one bell pepper for 2 tomatoes and its still really good)

I don’t measure anything so I can’t speak to the precise amounts but the flavors are great and the cayenne give it just a nice amount of kick

I went 4x on ingredients...glad of it because everyone wanted to take some home.
Used honey instead of sugar, frozen corn instead of fresh (this time:)...otherwise followed the recipe exact.
Will definitely be making it again!

I love this recipe! I like to double up the dressing because it gets absorbed easily by all of the veggies. I also added more cilantro than what the recipe called for.

We liked it. I added more cilantro and left out the tomatoes because my husband’s stomach can’t handle too many tomatoes. I put less cayenne pepper, but it wasn’t hot at all. I could’ve added the required amount of cayenne and I think it would’ve been fine.
