    This is such a simple recipe and can be jazzed up with whatever you have on hand. The hummus lime dressing is really delicious and adds so much to what otherwise would just be a plain grain bowl. I’ve made it lots of different ways - cooking and seasoning the black beans with some chili powder, adding Moroccan marinated tofu, using brown rice with lime in place of the quinoa, adding sautéed corn and peppers - and it always turns out delicious.

    Very yummy, an excellent nutritious and super-easy recipe! I did my own version of pico de gallo, with tomatoes, onion, baby spinach, salt and lemon juice. Did the job very well. I also used canned kidney bean instead of black bean.

    incredibly delicious for being so sime to make! what makes it even better, you can easily make it your own bu adding different toppings of your liking! i for example added oven roasted carrots and sweet potatoes and it turned out amazing! highly recommend!

    Didn’t have lime juice and cilantro - used a mix of Italian dressing and hummus and it was great! Also added cucumbers since they were in my fridge

    I forgot I did not have any black beans so I used seasoned canned pinto beans. Since I read the reviews about more seasoning needed, I cooked my quinoa in chix broth. I put fresh spinach on the bottom and layered with all the ingredients and I added edamamme peas. I really liked this dish. I used salsa instead of pico d gallo. I served parmesan panko bread crumb chix tenders on the side. Can't wait to eat it again.

    I made this with a couple of adjustments. I used garlic hummus, I added chopped red pepper and black olives. i also used the juice of an entire lemon for the dressing. i will make it again and continue to vary the recipe. As a guide is great!
