Really easy and fast to make. Simple but good taste, add any vegetables for extra variety. Use plenty of pico de gallo!

Didn’t have lime juice and cilantro - used a mix of Italian dressing and hummus and it was great! Also added cucumbers since they were in my fridge

I forgot I did not have any black beans so I used seasoned canned pinto beans. Since I read the reviews about more seasoning needed, I cooked my quinoa in chix broth. I put fresh spinach on the bottom and layered with all the ingredients and I added edamamme peas. I really liked this dish. I used salsa instead of pico d gallo. I served parmesan panko bread crumb chix tenders on the side. Can't wait to eat it again.

Sooo yummy! My hubby and 3 year old loved it! My 3 year old had 3 servings! Definitely in our rotation of recipes for our meal planning!

I made this with a couple of adjustments. I used garlic hummus, I added chopped red pepper and black olives. i also used the juice of an entire lemon for the dressing. i will make it again and continue to vary the recipe. As a guide is great!

    delicious!! great lunch recipe.
Really liked it. Sadly, I am not a spice fan, and I accidentally bought pico with jalapeños. So unfortunately, I couldn’t enjoy it but my husband and son loved it the way I made it. Will make again, but wussy style!

I added sautéed onions/ garlic/ and southwest spice to the beans. This spiced it up nicely. Also would add sliced grilled chicken next time....

Very good. I used fire roasted red pepper hummus for dressing, and added cut up grape tomatoes on top. Even my husband liked it.

Very good! It definitely makes more than one serving and is very filling. I double the recipe to feed two and still have more than enough leftovers. Also, I added corn and a little bit of lettuce for crunch.

Super delicious, I thought I would miss the meat but it was great without it! It’s a regular in my meal rotation now.

Improvised the recipe to fit what I had available. Swapped avocado and pick de Gallo for corn and salsa. Still turned out very delicious. Quick, easy and tasty!

I added some extra veggies (bell peppers go especially well), and tweaked the sauce with half hummus, half plain Greek yogurt, lime juice, and cilantro. Definitely will make again, we loved it! Thank you :)

I used leftover rice instead, added adobo seasoning to the beans and mashed them a little and added cucumber!

This turned out great, mixed half cauliflower rice with half quinoa. Will try with Tahini sauce next time, seems like that will go well.
