- 1/2 tsp. oregano
- water (or vegetable broth)
- 1 jar salsa (store bought or homemade I used Trader Joe’s corn salsa in this recipe)
- 30 oz. black beans (canned- rinsed well)
- 2 sweet potatoes (large, diced)
- salt
- pepper
- cilantro
- 1/4 cup aged cheddar (shredded Cabot, to top each bowl, or more if you prefer)
- cheese (*Omit, for vegan option.)
