- 1 lb. beef heart (grass-fed, sliced or cubed)
- 1 sweet onion (large, diced)
- 3 cups celery (diced)
- 10 cloves garlic (minced)
- 2 sweet potatoes (medium sized, or yams, you could also use approx. 2-3 cups of cubed butternut squash)
- 2 qt. beef stock
- 2 tsp. dried thyme
- 8 bay leaves
- 1 tsp. dried rosemary leaves
- 3/8 cup balsamic vinegar
- 4 cinnamon sticks
- 1/2 cup chopped parsley (fresh)
- 1 tsp. sea salt (ish each, and course ground pepper)
- coconut oil (expeller-pressed, for frying)
