These turned out absolutely amazing. Left out the mushrooms because my girlfriend doesn’t like them. Blistered the cherry tomatoes in the cast iron along with the onion... added some hot, Hatch green chiles to the meat mixture. Also stuffed a few banana peppers and it was great!
