- 1/4 tsp. dried oregano
- 2 cloves garlic (peeled)

- 3/4 cup extra virgin olive oil (best quality such as Lucini or Colavita)

Love this salad , the dressing was SO GOOD!
I left the olives out and added some red onion and artichokes. I also used fat free feta . I’ll definitely make this again

I really liked this salad, I couldn't help but add a few extra ingredients though. a little hard salami, and a few pepprocini, and green olives. The dressing was excellent and added just the right amount of tang and spice. It pared very well with lasagna and a loaf of fresh bread.

Really delicious and impressive. Just like the big salads I used to have at my Italian friends' house growing up. I didn't know how to work with the ricotta salata so I cubed it and it was too dry. Next time I will crumble as I now see the recipe instructs. I really liked feta in brine here too. Didn't need much dressing. My new go-to recipe!

Made it a couple of times now. Ricotta Salata is hard to come by so I've made it with feta for a Greek salad and another time with Parmesan for an Italian salad. Both received raves from the people I served. So the recipe is a keeper!

Great for Italian dinner night. Refreshing salad that impressed my husbands family. Dressing has fresh & tasty flavors.
Making it again tonight. Wouldn't change a thing.
