- 1 brown onion (diced)
- 2 stems celery (diced)
- 3 carrots (cut into 1 cm dice)
- 1 clove garlic (minced)
- 1 tsp. rosemary (finely chopped)
- 2 Tbsp. tomato paste
- 3 Tbsp. worcestershire sauce
- 2 Tbsp. brown sauce (I use good old HP sauce)
- 1 tsp. Dijon mustard
- 1 1/2 cups beef stock (weak)
- 2 cups lamb (left over cooked, cut into chunks)
- 1 tsp. cornflour
- 30 mL cold water
- 3/4 cup peas (petit pois are lovely and sweet)
- 2 cups mashed potato (prepared)
- flat leaf parsley (to serve)
