One of my favorite vegetables is bhindi or okra. Okra is used a lot in Indian cooking. This recipe for bhindi masala is how I like it best, dry. You can serve it with Roti (indian bread) or Steamed Rice and Dal..

- 4 cups okra (chopped)
- 2 onions (chopped)
- 1 Tbsp. garlic paste (ginger)
- 1 Tbsp. coriander powder
- 1 tsp. cumin seeds
- 1 tsp. red chilly powder
- 1 tsp. garam masala (powder)
- 1 tsp. amchur (powder)
- 1/4 tsp. turmeric powder
- salt (to taste)

Directions
- Wash and cut bhindi in small pieces (make sure the bhindi is completely dry after washing)
- Heat oil in a wok or kadai. Add cumin seeds and let it splutter.
- Add chopped onions and ginger garlic paste.Fry till golden brown.
