- 3 Tbsp. oil (divided, I used avocado oil)
- 1 tsp. cumin seeds
- 3/4 tsp. fennel seeds
- 1 tsp. whole coriander seeds (crushed)
- 1/4 tsp. asafoetida (hing)
- 1 medium red onion (chopped)
- 1 green chili (chopped)
- 1 tsp. coriander powder
- 1/2 tsp. Garam Masala
- 1/2 tsp. amchur (dried mango powder)
- 1/4 tsp. red chili powder (or to taste)
- 3/4 tsp. salt (or to taste)
- 2 Tbsp. chopped cilantro
