The loaves came out just as described-a very crunchy crust and a soft crumb filled with holes just what I was hoping for! Because of a comment on the flavor, I was a bit apprehensive but I actually loved the flavor. This was my first time using a long fermentation fridge process (3-5 days) since I am new to bread baking and it was very easy and got a good result. I’m learning not to rush the process.

I've made this many, many times ! One of my favorite recipes. Easy to make & easy to add things like garlic cloves, oil cured olives, rosemary, thyme ... I've even made it into baquettes. It always comes out gorgeous and so good.
